Ingredients:
2 eggs
2/3 cup milk
1-2 cups (4-8 oz) shredded cheddar cheese
1/2 cup quick oats
1-2 tsp onion powder
1/2-1 tsp garlic powder or 2 garlic cloves, minced (optional)
1 tsp salt
1/2 tsp pepper
1 lb ground beef
for sauce:
1 cup BBQ sauce (any flavor)
1/2 cup ketchup
1 tsp mustard (optional)
some brown sugar (optional)
Heat oven to 350.
In a large bowl, beat the egg and milk until well combined. Stir in cheese–I don’t usually measure this, I just use two giant handfuls, so use as much as you want based on how cheesy you want it. (Note: a LOT of cheese will add more grease to the recipe.) Stir in oats, onion powder, garlic, salt, and pepper. Add beef. Mix well: you really need to use your hands for this; get right in there and mash everything together until it’s all mixed together really well! Shape into about 8 little loaves and put into a 9×13 casserole dish.
Prepare the sauce by mixing the BBQ sauce, ketchup, and other ingredients together. You can play with this and make a sauce you like! Spoon it over the loaves and bake uncovered at 350 for 45 minutes, until loaves are not pink inside.
(For one big loaf, bake at 350 for 30 minutes, top with the sauce, then bake for another 30 minutes, until no longer pink.)
Substitutions:
–chives for the onion powder
–one whole sleeve of crushed Ritz crackers for the oats (per pound of ground beef)
–if you only have one egg, that’s fine, the recipe will be just fine; I’ve just found that two works a little nicer
