Swedish Apple Pie

(Translated & converted from a Swedish family recipe, by Barbro Nilsson)

Mixture: 

  • 2/3 C butter 
  • 2/3 C granulated sugar 
  • 2 eggs 
  • 1 ¼ C white or wheat flour 
  • 1-2 tsp vanilla-flavored sugar 

Filling: 

  • ¾-1 C Crème Fraiche 
  • 2 eggs 
  • ½ C granulated sugar 
  • 2 tsp vanilla-flavored sugar 
  • 2-5 “sourish” apples (like Granny Smiths) 
  • Granulated sugar 
  • Cinnamon 
     

Mix butter and sugar until it is fluffy. 

Add one egg at a time and beat (“whisp”) carefully.  

Mix in the dry ingredients and make it a smooth mixture. 

Take away one-third of this mixture. 

Spread out the mixture in a 9” pie pan, spreading evenly on the bottom and sides. 

Mix the ingredients to the filling, except the apples, and spread it in the pie dish over the mixture you already put in there. 

Peel and slice the apple and put them on the top. Spread cinnamon and sugar over it all. Take the mixture you set aside before and make small lumps of it; spread them over the apples. 

Bake in a 375° oven (“middlewarm”) for 35-45 minutes. 

Serve it cold or warm with ice cream or vanilla sauce. 

(Makes 8-10 portions.)
